Fermented into open-top fermenters. Frequent punch downs and a long post-fermentation maceration ensured depth and complexity. This wine was then pressed off and racked and left to age for 5 years in a large format barrel.
Zinfandel is a very fruit-forward wine that is somehow bold and delicate at the same time. Often sought after because of the semi-sweet character notes. It is also part of California’s wine history & legacy, as many of the top producers lay stakes to 100-year-old vines. The estimates are that about 10% of all of California’s vines are Zinfandel.
Mourvèdre is a wine with heavy raisin, fig, and jam flavor. A rich & dark-colored wine, it is a critical part of most rhone blends. The ability to add sweet leather and balance is unmatched. Also, another grape that is grown across California,
Carignane is a high-yielding, high acid grape usually used to add sweet & spicy, & deep coloring components in blends. The variety is a difficult grape for winemakers to master and requires a lot of skill to produce a wine of finesse. With lower yields and better winemaking protocol, the wines are rich and distinctive.
